Passionate about Singapore food and cuisine, self-taught chef Chung Deming, who is also the owner of Kush at Timbre+, made his passion a full-time profession with his unique take on ModSin (modern Singaporean) cuisine through his first establishment, The Quarters. Besides preserving local traditions and food, he also has lofty ambitions of presenting humble yet amazing local ingredients to the world.
The Quarters serves up Singapore-inspired cuisine like Salted Egg Fries, Satay Burgers, Chilli Crab Pasta and Duriancanboleh (Durian Crème Brûlée). The Quarters and its revolutionary Buah Keluak Ice Cream have received widespread press coverage.
Chef Deming keeps himself busy by experimenting with fresh flavours while seeking new opportunities. He believes in his vision of Singapore being recognised internationally for its amazing ingredients and spices.
