Vatos Urban Tacos arrived in Singapore last year along with its cult-status Ko-Mex cuisine and culture. Vatos sprang from the minds of three Korean-Americans who wanted to offer a new type of dining experience in Korea. Influenced by Mexican street-style tacos in Los Angeles and Texas where they grew up, the boys opened their first outlet in a small alley in Seoul, Korea back in November 2011. The next five years have been good to Vatos as it garnered stellar reviews from local, food-enthusiasts in both Korea and Singapore, to internationally known personalities like U.S. Secretary of State John Kerry. Now operating five outlets in Seoul and one here in Singapore, Vatos is looking to bring their Korean-Mexican (Ko-Mex) style of cuisine to Timbre+ in the form of Vatos Express.

Patrons that visit Vatos Express can expect the menu to feature many crowd favourites that helped the brand win over the hearts and bellies of it’s fans, like the Kimchi Carnitas Fries, which was voted the “best dish in Korea” by 10 Magazine and one of the “six must-try foods in Seoul” by The Fodor’s Travel Guide. Other popular creations include Galbi Short Rib Tacos (marinated short rib, ssamjang aioli, Asian slaw, cilantro, chopped onions, and roasted sesame seeds on a handmade tortilla) and Mango Prawn Quesadillas (chipotle marinated prawn topped with cilantro lime crema and fresh mango salsa). These, along with a multitude of other interesting dishes have made Vatos a favourite spot amongst celebrities such as JYP, Girl’s Generation, Fly to the Sky, Tyra Banks and Michelin 3-star chefs Eric Ripert and Massimo Bottura.

Taste the World in Bowl! at Urban Mix. Inspired by food from around the globe, Urban Mix allows you to create your own, unique flavor combinations. Pile tender BBQ pulled pork on Singaporean-style chicken rice with Argentinean chimichurri salsa, or smother some creamy mashed potatoes with marinated Korean short rib, kale peanut salad and some ssamjang aioli. Start your diet with Spinach and Arugula salad topped with cherry tomatoes, chargrilled broccoli and cauliflower, and a juicy sous vide chicken breast.
