Discovering a passion for food from a young age, Shaun believes that the art of cooking lies beyond existing recipes. Rather, it should be about truly understanding the essence of a particular cuisine.
Not bounded by traditions or cultures, Shaun takes particular pleasure in experimenting with improbable flavour combinations that results in a free-world gastronomic dining experience. Besides putting delicious food on the plate, he favours food that is crafted from a memory or sometimes even an emotion – shuffling you between the past and future with every bite.
Shaun began his career journey towards discovering flavours of the world by securing a WSQ Diploma in Culinary Arts from At-Sunrice GlobalChef Academy and his culinary training includes being appointed as the Head of Pastry and Research & Development at Candlenut under Chef Malcom Lee. Shaun also worked alongside Chef Ryan Clift from Tippling Club during his apprenticeship.
Currently, Shaun is one of the founding members of TUK-TUK at Timbre+, delighting all with a twist in Viethai cuisine.
